NY Times Recipie for Edible Googly Eyes

Edible Googly Eyes

20 empty edible gelatin capsules (see note)

20 large malted milk balls, refrigerated

40 extra-large round nonpareil cake sprinkles, such as Wilton Jumbo Rainbow Nonpareils (dark colors like black or purple work best).

1. Separate the two halves of each capsule. Leaving dome plus about 1/4 inch all around, cut off excess length with small, sharp scissors, cutting from the open end. (Detailed photographs are at evilmadscientist.com/article.php/edibleeyes.)

2. Prepare “eyeballs”: Using a sharp knife, cut each malted-milk ball in half. Using an empty half-capsule, press a shallow indentation into center of each half-malted-milk ball (this is where the pupils will go).

3. To place pupils, place round cake decorations into two half-capsules. Press the capsules’ edges gently into a half-malted-milk ball, just until firmly anchored (not too deep; malted-milk ball can shatter, and pupils should be able to roll around freely). Repeat with remaining ingredients. Keep cool .

Yield: 40 eyes.

Note: Edible googly eyes can be placed on top of cakes or cupcakes, on a marshmallow in a cup of hot cocoa, or on top of a scoop of ice cream. They are most effective used in pairs. Gelatin capsules are available at health-food stores and at vitaminshoppe.com. "
